So now your trojans & viruses work on getting port 25 open through the ISP's auto open port 25 web page. Nice one.

Most websites are read only. So the only interesting bit for a spy is who connects, SSL doesn't hide that.
You can't use SSL on multiple virtual hosts in Apache 1.x (not sure about 2.x) so even for self signing you have to choose which single hostname to use.
What incentive for me as a host ?
I'm with you for some stuff, but that's usually where verifying your identity is important. My webmail/imap host is SSL - https://www.fastmail.fm/ but I have no idea who they actually are or if I can trust them once they have my details.
Email gets sent plain to that server so I only do it to protect my password from sniffing.
One thing people often do is put the AP INSIDE their firewall, such as hanging it on a spare switch port.
All the advice if for SERVERS but what about clients?
In my office I can reach a nearby free WiFi. For kicks I set up my AP with the same SSID and ran it open. Sniff Sniff. Not even illegal as they are connecting to ME ! Remember kids, no expectation of privacy in public places runs both ways =)
I work at a film production place. We send out about 150 screening DVDs a year. None of which are counterfeit, ALL of which are protected by copyright / licensing.
So an agent of our courier opening and viewing them would be illegal or at least a civil offense on their part. The person sending them doesn't have the power to sign a piece of paper giving our courier or their agent permission to watch the DVDs.
Finding a burned DVD inside a sealed envelope is not reasonable cause.
At least I know who not to recommend as a courier.

and, of course, the definitive pre-emptive fork :
Minix / Linux
Others I can think of
Mozilla / Firefox
Postgres / Postgres95 (now PostgreSQL)
Can I count OS/2 / Windows ?
Debian / Ubuntu
While I was googling for forks I found these :
