I tried the OpenMoko, too. Ended up getting an N900 and it's much better for an everyday phone. Wish I could get an N950, but I'm not that serious of a dev for that platform.
I just bought a fit-PC2 (linux) with semi-intentions to do what you're wanting to do.
It's pretty nice, I've been booting from USB into fedora 11 but haven't got the poulsbo chipset video working, yet.
Of all the gadgets I have fooled with (not a large number) this one installs 'normal' linux distros much better, except for the video driver (google poulsbo).
It draws 8w max when it's bttw and you can get one for just over US$300 at amazon.
I went to the AT&T store and told them I had an unlocked 3G phone and needed a SIM. The only SIM they had that worked was a 2G Cingular one that was left laying around. So I got the GoPhone pay as you go plan and put US$50 on it, which gets me on the network for $1/day on days I use it. Mobile to mobile is unlimited and all others are $.1/minute. Credit expires in 90 days, and rolls over if you re-up some $, otherwise it expires after a grace period and you lose the number.
This is my first cell phone and the only reason I got it is the open source aspect of it, I may or may not do any development on it, prolly just futz around a bit, at least until the base system is stable. I've not tried the debian thing yet, I'll prolly do that next.
I used PS2 Linux a little bit. I got a few OpenGL demos running, but that was about it. IIRC, it ran a modified version of RedHat, I can't recall which one but it wasn't too recent. There were some significant areas that were poorly/not documented as far as the Emotion Engine and I never tried installing anything other than the kit.
I got one and yes, it wasn't too usable. It ran a modified RH version of GNU/Linux and there were some areas they didn't give much (if any) info about, IIRC. There was an independent distro out, but I never tried it. It wasn't too expensive, $99, I think, for which you got a keyboard, mouse, 40Gb HD and a NIC card. That said, I never really spent alot of time with it, so YMMV.

X is a protocol, you are referring to the programs written that use X, ie. Gnome/KDE. try running fluxbox for a window manager and watch your machine r0x!

i built mozilla w/SVG support, not trivial, but not impossible.
try crux, it can be stripped down pretty easily...
