Could be they are just trying to counter all the unfounded bad opinions that seem to exist about SSD drives. For one, I have met more than one IT engineer who seems to believe that a SSD will fail(and be rendered completely unusuable) after 1 or 2 years of regular use:/
Look at the software they are running and that would answer your question.
And ubuntu isn't as visually appealing nor as known as the mac OSX.
Tried to do the same thing myself. Installed Ubuntu on some machines for the inlaws, they complain of not knowing what to do to use it. But, they are very happy with OSX...

If a user installs it and accepts everything and the kitchen sink(even if they mean to or not) then there just is no protection against that.
It is a staggered rollout. They are not reinstalling current machines(although there may be a push later on for this), they are only not allowing newly purchased machines to have Windows on them.
Its easy to see how print cartridges make up the vast majority of HP's income. Its hard to imagine the chips in the cartridges being so freaking important, if they are, they why don't they just build them into the printer? And let the ink, be just that, ink.
Yellow Dog probably has the best support, but you could always look at the PPC version of Ubuntu.

But you have to admit, the burning of the gas at hell's gate is a heck of alot cleaner than 40 years of the gases pouring into the atmosphere.
