There is so much institutional knowledge it most veteran IT workers' heads that could never be transferred. As another example there are so many random optimization tweaks or maintenance tasks that aren't documented anywhere that I could just neglect to mention and so as far as anyone knows are not part of my job. Casually remove those and everything works fine for a while but slowly starts grinding to a halt in subsequent weeks and months.
