You're quite right that the software is the main difference.
The big change that's not really shouted about is the memory allocation. MMS/images/contacts etc. are all stored in a pool of memory as opposed to seperate memory areas. This gives you a great deal more flexibility in how you use the phone.
I've used a development t68i for many months now and I can tell you it is the best mobile on the market at the moment. (disclaimer: I do not work for SonyEricsson, but I do work *with* them)
Earth and Beyond from EA/Westwood is shaping up pretty nicely (I've been beta testing for a few months)
They also taking registrations for the next phase of beta testing so get in there.
If you play as a Terran Trader its gets pretty close to the feel of Elite - I don't think I can offer much higher praise.
As its my first post with this account and I'm already losing Karma I may as well turn to the dark side...
Here's something to pass the time: Download a sample of a cylon from BattleStar Gallactica saying "By your command". Play it back in a loop and see how long you can listen to it for before going mad.
The record so far is 40 minutes by our sysadmin, but he wasn't quite right to start with.
