1. Most of the things that were NOT Internet-bound were within the margin of error for humans triggering things with their fingers.
2. Did the video say which version of iOS 9 they used? There was a version of iOS 9 (9.1 or 9.2?) that was specifically designed to improve performance on the 4s and iPad 2. Did they use it?
3. Other than the one bit with iTunes on iOS 9 where it never displayed the thumbnails (which I think was a server-side issue), NONE of the OS versions were in ANY way "unusable".
4. Since so many "tests" were Internet-based, several "tries" on each test should have been done to help negate the effects of temporary WiFi slowdowns (especially since the 4s doesn't seem to support 5 GHz).
5. Since there were a number of edits in the video(s), and because this was a composite of several separate videos, in no way can this video be taken at face value.
6. It simply isn't "damning", nor especially supportive of the AC's "slowdown" claims. In fact, I was fairly impressed at how even they kept the overall "responsiveness", even though almost the entire OS was replaced, framework by framework, over the course of that time.

Actually, AC, I was fearful of upgrading my Ancient iPad 2 and my sort-of-ancient iPhone 4s to the last-possible OS (iOS 9.3.5), because I was convinced it would slow them down to the point of uselessness. But, since they were both pretty far behind, OS-wise (the iPad was on iOS 7.1.2, and the iPhone was on iOS 8.something), and iOS 10 was about to come out in a few days (and which was not compatible with either device), I figured I'd better just grit my teeth and do it while I still could.
However, not only are they NOT any slower, they might be just a touch snappier overall. Not a whole lot, and I did have ONE third-party App that got Orphaned (SampleTank, but that's on them); but it certainly wasn't ANYTHING like the horrorshow of "unusability" that many people (falsely?) reported. I continue to use the iPad 2 several hours each and every day. The iPhone 4s has been "in retirement" for quite some time.
As for running the latest XCode (XCode 8!!!) on SL (which came with XCode 3 or 4)? Seriously? And besides, there are PLENTY of Applications that won't run on a 32-bit version of Windows 7; so don't give me THAT crap!
If you want to run XCode 8, depending on your Mac, you could likely install El Capitan (or Yosemite) on an external Drive, and boot from it to do XCode 8 Development. Time DOES march on. SL came out in June, 2009. It really IS time to move on to a newer version of OS X/macOS. ESPECIALLY if you are doing DEVELOPMENT, FFS!!!
As for iOS "Constantly" Nagging you: Fortunately, there IS a way to stop it. And albeit a not-very-intuitive solution, but it is very simple. By the way, that took exactly 1 second to Google; so you MUST not have been TOO annoyed, eh?
Does this count the huge numbers that took the free upgrade, found they didn't like it (or just wanted to lock in the upgrade) and then went back? Does this count units sold to stores but not through to end users?

I went further and drilled a hole for a 1/4" jack. Success! I now can use my expensive Bosendorfer headphones. Now I'll try it on my dog's iPhone (I got him eight of them) using a Bantam (TT) jack. If this works I might next try it with banana plugs.

The Prius acceleration hoax turned out to be exactly that. Some complaints were found to be operator error. At least one was a deliberate scam attempt. The rest were based on not understanding the two braking systems.
Nevertheless, Toyota paid up to make it go away rather than fight each one separately.

That said, because it is software-defined AND you have root, *perhaps* you could do SPI over Lightning. That's not what I was suggesting, though.
At first glance, I would guess that Lightning is done over GPIO pins (with maybe some DMA thrown in), rather than a specific ARM "peripheral". But, since Apple actually rolls-their-own ARM designs; it would be logical to assume that they DO have some sort of custom Lightning i/f built into their SoCs.
They might talk to their radios, gyros, etc. over SPI (and/or I2C); but, in such a tightly-integrated device, it might be pretty hard to come up with an "enable" pin for your particular, non-planned-for SPI device.
Personally, if I was just using it for some "offline" storage that didn't require "Always there" access, I'd just use a Lightning-based Reader/Writer (Amazon has a nice one for SD and MicroSD (albeit a little pricey) I've been thinking of getting), and something like the GoodReader App, to access the SD storage and the "local" files. Life's just too short to ass-around with jailbreaking to get access to a POSSIBLE SPI i/f. And then you have to write some sort of Driver, and then you have to figure out how to expose access to that Driver, etc. etc. By the time you get THAT familiar with the innards of both the Device AND the OS, you'd mightaswell be making money with those skills...;-)
