WMP isn't front and center of Win10 like previous versions Windows but it's still there. You have to set it to be the default player. There are older features that I think that you have to hack like DVD playback.

It is called "Suggested Apps", and with one tic inside of settings, it is entirely disabled. Do we need an entire bitchfest for a simple optional OS feature that is easily disabled?

What I'd also like is a way to tell the OS that a particular wifi connection should be treated like a cellular connection, and have all apps respect that. And I'd like a pony.

Android Market used to need 3G
How about Android Market, er, Google Play?
For a long time, Archos devices didn't support Android Market either. A couple years ago, Google refused to license Android Market for use in Android devices with no cellular radio because 3G Internet access and either CDMA or GSM telephony were requirements in the Compatibility Definition Document. That's part of why there wasn't a close substitute for the iPod touch until the fourth quarter of 2011 when Samsung introduced the Galaxy Player. But I don't see how that's "lockdown" any more than what other tablets and phones already impose, seeing as one can turn on Unknown Sources and (presumably) put on other stores like SlideME and AppsLib and F-Droid.

Both have an open kernel. There are various open GUIs available for both. Manufacturers also make closed GUIs, for both.
I agree with most of what you say in the paragraph. But the key difference that I'm trying to point out is that for Android, unlike for Mac OS X, a freely licensed GUI is distributed by the same entity that maintains the kernel and the core libraries and is considered the platform's official GUI. This means there is enough of a freely licensed operating system for, say, Archos to sell its 7th and 8th generation devices with mostly vanilla AOSP on them.
But if you buy a tablet from Amazon, you're going to get something pretty much as locked down as a tablet from Apple.
Did you mean "from Barnes & Noble"? The Nook Tablet (the new version, not the Nook Color) is locked down nearly as tight as an iPad, but I remember seeing Settings > More > Device > Unknown sources on a Kindle Fire.

Apparently, WMC as-shipped lacks MKV support (how dumb can MS get?), but it can be added later. Use this Google-obtained advice at your own risk, etc. Our media server is a Synology box which runs Linux and handles many formats.

Simple solution
Don't use News Feed at all. Make a custom List with everyone you want to read on it, and use that instead. Or you can just completely delete your Facebook account and be done with it.

You can (allegedly) actually delete it, but you need to find the secret link and wait out a two week cooling off period.
In several US States you can actually buy a handgun faster than you can delete your Facebook account.
