To often the genes that express flavour also come with negatives such as easy bruising. Big business is more interested in something like Red Delicious that any idiot can throw into the bin. GMO's have a lot of promise but the developers have to think about more then tomorrows profits. Personally I think that capitalism could work great as long as there are multiple competitors who aren't run by committee.
