These hugely wasteful UIs are what we supposed to use and love now. I understand them on touchscreens...but desktop users should have at least an option to use a compact, old-school UI.
That, together with monocromatic icons makes me hate modern UIs (specifically Windows 10's UI).

Something that respects the user privacy, that doesn't show me ads, that doesn't try to force Ms apps and services on me, that gives me full control over my machine, you know, a proper OS.
Well, it's pretty obvious that Google doesn't want a file manager in Android because it doesn't fit their goals. They want you to store everything on the cloud so they can datamine the hell out of it
I hate that mobile OSs give the user so little control over their own devices, they should be like a PC only smaller. And, no, that doesn't mean they should be hard to use for regular users just that they shouldn't prevent power users to use their devices as they see fit

Can't help but compare the Windows 10 situation where they're pushing many changes that many people don't like to the Xbox One release where they had to back down on many of their plans because people where threatening to go en masse to the PS4.

Space management is a freaking hell in Android and I say that as someone who otherwise loves the platform.
I recently (also have an s4) had space troubles and it turns out a system app called "download manager" or something like that (sorry I don't remember and also my phone is in Spanish) was using around 1GB of cache.
Also, new smartphones should have a minimum 32GB of internal memory and it'd be nice if Android allowed apps being installed (completely, not partially like some allow now) install apps in MicroSD cards.
I pray to the gods that games developers start releasing most games on Linux. That day I'll ditch Windows forever (at home at least).

What you propose would be going against the direction they're pushing so hard towards. And those things you hate (I hate them too) are conscious decisions. They're not going to revert their course without a huge reason, and that's not likely to happen since most "real word joes" just don't care.
I'd like as much as you that they returned to something like Windows 7 but that's sadly just not going to happen.
Microsoft will surely go this route first: You won't be able to install applications from outside the Store without toggling some option.
Later on, if adoption of the Store is high enough maybe they'll actually forbid installing from outside.
Also, the intent of both Microsoft and Apple is obviously to force to go through their respective stores, it's just that the condtions are not favorable enough yet.

It's not well explained in the summary, but one of the conditions when licensing the Play Store for inclusion in your Android phones is that you can't release phones with Android forks. I don't know the exact wording but you get the idea. So #2 is actually true, it's just not clearly explained in the summary
I'd love something like that too, I'd even settle for color eink for the time being (since reading would be my most important application) but it seems we're not getting nearer to it.

The intention is also to help them gain marketshare on mobile where they trail Android and iOS by a wide margin. And the PC is a stagnant market while the growth and money is on mobile.
To sum up, they basically saw the PC as a platform on decline (which it is) and thought using their dominance on PC to try to push you to their services and devices ecosystem and try to gain marketshare on mobile where they were practically dead.

They added the start menu back, (Well, sort of: They added a version of the start menu that does fewer things than the old one) but they also added many things many people dislike, like the forced updates, the nagging the use Ms services, etc.
