i would start in a different order, not to contract with someone, and then see if i trust them, first find somebody you can trust, (partner companies can give you hints on good ones).
the point is that even if the one in charge is just been observed for an army of people (who will become expensiver than anything else), there are no warranty that they can avoid data stealing if one member is really trying to.
so, contract some big firm, make the contract to cover data leakages, and please realx yourself a little, maybe your information is worth the problem to steal it, but first there should be someone wanting to get it, there is a very low probability, your information gets stolen and then it hurts you.
btw, im an IT manager for a region with several countries, and we hacve outsourcers in many countries, just occasionally go a see what are they doing, a small control should be fine if you hire big ones

sorry man, but I dare you to drive in Bogotà Colombia, where public transport drivers that use the size of their vehicles to gain places on the way, where we have literally speaking BIG HOLES(2 or more meter of diameter and more than 15 cm dept in the middle of the streets), pedestrians HATE to use pedestrians ways, they love to go into cars running even when there is green light for cars, also and one of my favorites, people's bodyguards, that block (yes literally they put their cars in the middle of the streets no matter how much cars are going through), just to make his boss to get in time to the office.
Believe me, i Know a lot of outsoiders that prefer to go by taxi anywhere than buying a car, just because thie is a high stress level related to drive in BogotÃ
