The iPod Touch only has 256MB of RAM in the 3rd & 4th gen, 128 in the others. iOS takes up a good chunk (roughly 80MB). I see someone has edited the wikipedia page on the iPT to directly contradict this. If you read iFixit's teardowns they confirm my information.
You mean the Galaxy S2? The Nexus S is from December of last year. Also, they don't require the same activation via server that the iPhone does... It's almost like they thought ahead about this.
This is a big misconception. Unlike iOS where there have been plenty of API breaking changes, Android has been more stable. You can write for 1.6 and it will work on pretty much any device out there. Or if you want the new fancy UI stuff there is a package that will let it work on older devices provided by Google themselves.
The difference is there's only 1 store available, so anything not let through for content reasons is censorship. Now I realize there is a web browser built in, and in some ways that gets around this. However, they limit the functionality of that too in some ways.
The Samsung Galaxy S2 is outselling all iPhones currently. Currently they have sold over 3 million of them and it's not even available in the US (Android's biggest market).
Because companies like Disney only want their movies available for a certain time. So they are only available on Netflix for X number of months. I don't agree with it, but there's the conditions.
Apple has already shown they pretty much don't want to do business with Samsung in the future. Moving their chip fab and several other components to competitors.
There's been lots of Android customization without terrible problems. Just look at the default widgets, lots of customization options there to start with. I enjoy having a simple toggle for things without having to go through piles of menus. (wifi, wifi sharing, bluetooth, etc)

Supposedly one of the current patents in the lawsuits is over a grid of icons. Possibly just a square grid? You could maybe go for a hex grid like some of the later Windows Mobile 6.5 variations. The parts are estimated at 50% of the price of the device on the market. That leaves lots of room for someone to come along and cheap them out.

Since 10.7 was released last week, you can't really say that 10.5 will be supported. In a month or two we may know the answer.
