They don't care if you know EJB if you're a citizen of the U.S. It's just an excuse not to hire you.
I used EJB professionally and I can say it's good, but it is usually used when it is not needed. Just read a book about EJB do a couple test apps and you know just as much as most people that claim to have years of EJB experience. I myself only use EJB upon request. Better yet become Sun Certified for EJB, but that won't get you a good job if you live in the U.S.
