The last work-related OS switch that I made was to Linux, because I am working on embedded Linux for cell phones. Vista? Doesn't offer anything that would justify switching; here I totally agree with our IT department.

"Embedded" in 2007 doesn't necessarily mean severely resource strapped like in the 8051 days. I work in firmware development for cell phones where 300MHz 32-bit ARM core with DSP co-processor, graphics accelerator, advanced IO-subsystems, 128MB RAM, x GB NAND flash are a typical HW platform. While not as powerful as a modern PC, the HW is similar to a PC from the late 90s, and those can easily run a Linux or BSD or Symbian or WinCE kernel.
Also, a better embedded TFT LCD usually has a resolution of >QVGA, which makes a GUI feasible so OSX can shine there, too.
