When the time came, they darkened the entire greenhouse and lit it from within to get the day length correct and force the leaves to turn red. Something like this would definitely lead to very expensive coffee.
Or even the length of the day/night. Some plants do not grow properly unless they have the correct amount of daylight. this is tied to latitude, and cannot be changed all that readily.
