Jeremy Soule
Jeremy Soule is the first to come to mind, and while I like Jesper Kyd's work, I think Soule is better. The music for Oblivion was so-so, but I think that the music in Morrowind is some of the best I've ever heard. It's amazing. Compare the Oblivion title and the Morrowind title and tell me that Morrowind's is not better.

IMO the best music I have ever heard in a game came from Jeremey Soule he did the music for Neverwinter Nights.

Re:My favourite composer...
To continue the slightly offtopic theme, I'm a fan of Jeremy Soule, who did music for (among others) Icewind Dale: Heart of Winter, Giants: Citizen Kabuto, and my personal favorite, TES3: Morrowind.

Re:Video Game Music - Remixed
Additionally, if you're new to the whole ocremix scene, I'd recommend checking out this remix.
Jeremy Soule, the man behind other notable game soundtracks such as Neverwinter Nights, Icewind Dale, and Morrowind, put together a very nice arrangement of one of Nobuo Uematsu's works. In a geeky sort of way, its pretty cool to see one good composer pay this sort of homage to another. -
Have to Disagree. Jeremy Soule for example
I'm not a big fan of "electronic" sounding music. I find far more lasting appeal in more classical sounding background. Take for example, the great work by Jeremy Soule, one of my favorite composers. His theme for "Total Annihilation" is one of my favorite bits of ANY music. It reminds me of a story I heard about Star Wars: A New Hope. Apparently it was originally going to have a nice electronic/"space" backtrack. Just think how it would have changed the movie to have some synthesized theme instead of William's awesome work? There's no reason to cheapen game music just because we can.

No discussion in game music should ignore Soule
No discussion about game music should ignore the incredible composer Jeremy Soule. He doesn't get nearly as much attention as Nobuo Uematsu (sp?) of Final Fantasy fame, but is just as good IMHO.
Some of his credits include:
Icewind Dale (my favorite of his)
Morrowind (my second favorite of his)
Star Wars: Knights of the Old Republic
Neverwinter Nights
Unreal II
Dungeon Siege
and many more.
If you haven't heard his work, check his website: www.jeremysoule.com -
Umm..
Not sure what to add to that, but Machinae Supremacy is inspired by game music and they've done game music. But since you've reading this story you knew that already
;-)As for stand-alone soundtracks for Games I think that's going to be a niche for a very long time, but one that I think is worth having. Jeremy Soule and Inon Zur have done a lot of good music for games (BG, IWD, etc). Robert Holmes did good work on the GK games too (also available on soundtrack in the now somewhat-hard-to-get Gabriel Knight Mysteries (Limited Edition) package).
