Just because 'games' as a genre are available on different platforms doesn't make the OS irrelevant. The same games aren't available across all platforms because the OS is relevant. Sure some steam games are available on OSX as well as windows, but none on linux. And of the myriad of iDevice games there are very few that are available on other devices like android and maemo.
Productivity software is either cross-platform (Open/LibreOffice) or browser-based (Google Docs.)
Rubbish, look at MS Office, iLife, Inventor, MAX, Revit, Aperture, Logic Pro, Adobe Creative Suite, etc...
Typical users are spending more and more time in the browser as Web-based applications fulfill their needs.

Getting 70% is a developer fantasy. By the time you find a publisher, and they sell to a distributor, who then sells it to a retail store... a developer is lucky to get 15% to 20%.
Your comparing the app store (digital distribution) to traditional physical methods. So sure, in that comparison it looks pretty cost effective, but this isn't the invention of digital distribution.

Really? You have the 360 over the PS3 in this regard? PS3 works with standard media servers, has a great freeware media server that transcodes on the fly, doesn't double dip your wallet for netflix like the 360 does, and has a much smoother multimedia interface

I think you're confusing technological possibility with reality. With all the cross-platform tools and frameworks the OS itself could be irrelevant from the user's perspective, but the reality is there is still a myriad of everyday software that is platform-specific.
To be honest, I don't know how it all works at the business level, all I know is that I'm ordering my next laptop without windows and I'm going to spend up to 12 hours on the phone to get the discount for it.

But it's not designed for a 'specific purpose' at all, it's an 'appliance simulator' - in that it can become an appliance based on the program it is running - the same as a computer, not an appliance itself. To 'do whatever apple wants', is not a 'specific purpose' - unless of course the meaning of the word 'specific' escapes you - any more than a computer has the 'specific purpose' of 'doing whatever the user wants'.
They may not provide a 'boot camp' but i don't see a reason they would do anything to stop alternative OSes, they'll still get a hardware sale - and potential software sales - to those who would otherwise go elsewhere, exactly the same as with Windows on the Mac.

but they haven't done anything about people jail breaking those devices so that they can use other services and other software
