I've found puzzles and word games to be a good way to learn useful data structures and algorithms. There's not a lot of complex UI stuff required for games like boggle or scrabble. Implementing a crossword puzzle generator can also be a fun and challenging.

Personally I find 20 lines of python to be a bit more maintainable than the equivalent 200 lines of Java (with 400 lines of XML).

FreeBSD has a kickass GUI. It's called GNOME. For whatever reason, it's easy to install on FreeBSD, but practically impossible to get working on OS X.
