Yes, good points about the importance of good nutrition for recovery (although now might not be the best time to focus on cleaning out sequestered toxins, although a good long-term goal). Most mainstream medicine pays at best lip service to nutrition. Omega 3 fatty acids might help rebuild the brain, given the brain is mostly fat. Eggs have some as you say, but there are probably better choices. This is worthy of lot of further research to learn all that is needed. Don't count on a typical MD including even a brain specialist to know much about this.
Bear in mind there are different kinds of strokes which might need somewhat different nutrition depending on the causes and other complications. Specifically, clogged arteries causing one kind of stroke probably need a somewhat different approach than rebuilding damaged arteries that caused a different kind of bleeding stroke, since there is a balance of processes going on to strengthen or tear down the walls of arteries. But in either case, the body can't do the right thing without the needed building blocks and the control of inflammation caused by poor nutrition.

But again do your own research on what is best since a lot of his general diet advice is more for people with clogged arteries and at risk of ischemic stroke than for those with weakened arteries as he focuses on salt-restriction instead to minimize the risk of hemorrhagic stroke. There are processes in the body that both tear down and build up arteries, and they probably must be kept in balance to avoid both kinds of strokes, even though most US Americans are far more at risk of strokes from clogged arteries of the building up process going too far (from both inflammation and bad fats). The article cited dosing for Wafarin/Coumadin as a motivation for genetic research -- ironically ignoring it is not needed at all with better nutrition (in probably almost every case, so talk to an informed medical practicioner etc..). The link above is from something Dr. Joel Fuhrman wrote in 2004 (just to show how people searching for a magic bullet ignore the obvious). From there:

Eat more healthfully and stop taking Coumadin. The main problem with the studies that show that patients at risk of stroke benefit from anticoagulation with Coumadin is that they tested mostly high-risk patients on the typical disease-creating American diet, not low-risk patients on a vegetable-heavy, plant-based diet. As one's diet changes to include more vegetation and less and less animal products and refined foods, one's cholesterol drops, one's blood pressure typically decreases, and one's risk of a heart attack or embolic stroke plummets.
A high-nutrient, plant-based diet already has been demonstrated in medical studies to have a powerful effect at decreasing the risk of embolic stroke as well as heart attacks. For people following my nutritional advice, the use of Coumadin becomes ill-advised. The use of this dietary intervention quickly drops people from a high-risk to a low-risk status. In most cases, Coumadin is no longer needed.
Most people on Coumadin would be much safer if they ate an ideal diet with lots of vitamin K containing greens; took an aspirin, EPA/DHA fatty acids, and LDL protect daily; and stopped taking the Coumadin. The risk of all causes of death would decrease precipitously. Eating right will not cause you to bleed to death. Instead, it can save your life.
Natural anticoagulants to consider instead of Coumadin are tomato juice, pomegranate juice, fish oil, vitamin E, horse chestnut seed extract, and ginkgo biloba.
Is Coumadin the Only Hope?
For those who absolutely must take Coumadin, because of a recent thrombotic event, the danger of not eating a healthful diet exceeds the risk of increasing the Coumadin dose slightly to accommodate the healthier diet. As long as the amount of greens you eat is consistent, your doctor can adjust your Coumadin dose to accommodate it.
For the patient who must stay on Coumadin, the diet must be consistent from day to day to avoid fluctuations in the effectiveness of the drug. To keep the vitamin K amount constant, it is sensible to eat one large raw salad a day and one serving of dark green vegetables such as asparagus and string beans, but leave out the dark green leafy vegetables, such as steamed kale, collards, and spinach. Adding some of those to a soup is okay, however. The goal is to keep your vitamin K level stable, so the amount of blood thinning does not swing into a danger zone. The reason diagnosis is problematical is that most illness in our society comes from poor nutrition (and sometimes other lifestyle choices). The body may break down in endless different ways on a poor diet -- but the commonality of the poor diet. So why even bother in most cases to figure out specifically how the disease is cause by poor diet? Granted, some small amount of disease may not fit this model -- but most does. For stuff that does not fit, we are getting better computer tools for diagnosis every day.

Common causes of immune dysfunction
VItamin D deficiency, lack of phytonutrients, lack of iodine, lack of omega-3s, excessive preformed vitamin A, lack of early breastfeeding, lack of exercise to move lymph around, artificial ingredients in food, food allergies or lactose intolerance, environmental toxins including heavy metals, and so on could all contribute to weakened immune systems and a build up of toxins in the body leading to mental dysfunction (relative to a historic normal). I agree though that parents and guardians of autism spectrum children may often feel desperate, and that is, as you say, a risk for getting preyed on in some way (whether by alternatives or the mainstream).

By the way, real scientists like Ovshinsky basically welcome harsh criticism of any bold new claims they happen to be making. You're always going to be your own work's biggest fan -- but if you're honestly pursuing the truth you have to be aware that means you can't be your own work's best critic, so the only way you're going to ever be sure that you've done it right is to put it out there, let it get attacked, and see if you can figure out how to save it. Ovshinsky did figure out how to defend a lot of his key ideas. Guys like Pons & Fleischmann (the "inventors" of cold fusion) couldn't. Because there wasn't anything there.

For someone with dark skin, that will take two to four hours in a bathing suit. Any excess vitamin D beyond that will be broken down into other compounds that we don't yet fully understand the significance of (but may have health value). Meanwhile, the body slowly charges its fat soluble stores of vitamin D. But you may need to do that for months to saturate the body to the point where it will have a six to nine months supply (maybe longer or shorter) where you could go the winter without supplements.
For about half the year in more Northern latitudes, your body will not make any vitamin D at any time of day because the angle of the sun through the atmosphere means too much UV-B is absorbed for it to have much affect on your skin. Similarly, outside of peak sun hours, there is much less vitamin D produced.
So, while I was taught the same thing you said growing up, that even in winter your face or hands would produce enough vitamin D to get by, it just is not true. And that has serious implications. For example:

:-) Send me an email if you want, my address is easy to find.She was my father's aunt IIRC. I only met her once that I can recall, when my father and I visited her home around 1985. But she might have been at some get together or other other times we visited that does not stick out in my mind. I don't remember her speaking English and I do not know that much Dutch. They talked and I went for a walk around the area. I was overdressed in a overcoat and hat, and some neighborhood kids pointed at me and said "gangster" and chased me a bit, and I went into a store to avoid them. So, that's mostly what I remember of that visit.
:-)I feel diet and lifestyle (and the extent to which genes may interact with interests and habits) have a lot to do with this though. So does very early life experiences. Even being born premature might have had some value, in that the slower we grow perhaps the slower we age? Not having kids may have been a factor too? Also, there is a lot to be said for a positive outlook on life however you get that.

The touted concept that the pandemic flu of 1918 target the "young and healthy" is not quite accurate. It's true this guy lost weight, but he may have increased his disease risk. Also, it probably took a lot of will power that almost no one can keep up for years. A whole foods diet, heavy on stuff like vegetables fruits, and beans, with fiber to fill the stomach, and nutrients to satiate the metabolism, is a much more sustainable diet for the rest of his life.
Non-starchy vegetables, beans and fruits give you about 200 to 400 calories when filling up your stomach with lots of essential nutrients. (See "Eat to Live" by Dr. Fuhrman.) Fill up your stomach on meat and dairy and oil (plus maybe a little processed starch) and that will give you 3000 calories or so before your stomach is filled up (but little of the plant-derived phytochemicals your body needs for optimal health). That explains the mathematical basics of all anyone needs to know about weight loss and health.
:-)And so, as Dr. Fuhrman says, "make the salad the main dish".
BTW, if you are an Inuit descendent (Eskimo) several hundred years ago, eating free range fish from unpolluted waters, incuding the contents of fish's stomachs with some plant algae, as well as seaweed and some other occasional plant stuff, you can probably get away with a meat-heavy diet.

Abundant science needs a funding paradigm shift

Moderate exercise and some other things can help too (see Dr. Andrew Weil for the bigger picture of the holistic side fo health, though his nutrition advice is not quite as good as the above links) but again, there is not the huge profits in that as, say, doing triple bypasses.

Re:Why coffee is problematical
If you do someday read the previously linked information about the "Pleasure Trap" my Douglas Lisle or "Eat to Live" etc. by Dr. Joel Fuhrman, you would see you that what is recommended is very different from being a "neo-puritanical (pleasure is bad!) health food nut".
As Dr. Fuhrman says, healthy eating can be as pleasurable over the long-term as unhealthy eating (or more, because you know what you are eating is good for you and it tastes great). I would rather have a home-made sorbet from my blender than even the best ice cream from the store -- it tastes better now that I am used to it, and I know it is good for me. A fast can sometimes help with that transition to reset the tastebuds back to normal.
Essentially, most people probably will get less enjoyment from a lifetime of drinking coffee (given various ill effects and periodic withdrawal symptoms, and the "return to baseline") than someone with a lifetime of drinking green smoothies (or other healthful things with some variety, fruity sorbets, fruity ice creams, and so on). The whole point of the article is that there is a return to baseline whatever you do, which is also the point of the "Pleasure Trap".
While you are obviously very knowledgeable about coffee, there is a lot of nuance and subtly in vegetables, fruits, edible beans, nuts, seeds, and whole grains than can no longer be appreciated by someone (say, in the USA eating the S.A.D. Diet) who has been trained to prefer an unhealthy amount of salt, refined sugar, and animal fat in their diet. See for example, in the industries own words:
