Because if I buy a game at launch, and its buggy, then I will be unhappy, and avoid buying games from that company in the future. You don't have to be a launch title to do well. Sure, people usually buy at least one game with the console. People also buy games after that point too though, and if your game isn't one of the hyped up launch titles it won't matter much anyways. Most people don't buy 10 games with their console, so if your game is one of the "lesser" games, its going to be getting bought weeks and/or months after launch anyways.
The reason they are a week late is probably because they based their schedule on a release date sony gave to them way back when, and then sony moved it up a week and they weren't willing or able to cut a week out of their dev time.
No game is ever perfect. By your logic no game should ever be released, they should just keep "waiting a month" for it to keep getting better and better. At some point the game is as complete as its going to be, and its time to ship it. If that time is a week after the console comes out, then I would much rather them use that extra week than rush it to be out for launch date. You can certainly get work accomplished in a week, especially in testing for and fixing annoying bugs and glitches.
These are not specialist shops, far from it. They are like futureshop or best buy. And they have carried plenty of other games that are actually violent. This game is rated T, and is very tame. If they were simply not carrying violent games, or games that are rated M then you would have a point. But they are singling out this particular game because it involves a kid who goes to school.

I know alot of people do call it one, but guildwars isn't a mmorpg. Its not massively multiplayer, you play with fewer people than in counterstrike. Its just like diablo 2, its certainly online, but you are just playing little 8 player instanced missions.
