As long as other apps could take input from all controls on the camera you could get some great alternate takes on control software for a DSLR.

This is simply not feasible in complex cheap pieces of software, the amount of rigour performed has to cost less than the amount of money they can get for the software. A complex piece of software can and will have literally thousands of bugs even when well engineered and no matter how hard you try their will always be more. Software is a tradeoff between time, quality and cost, if heavy costs are enforced then you will simply see less products and many products die off completely.
