Since you're the first post I came across that represents both the teaching profession and those not in favor of laptops in the classroom, I'd like to ask you if A) you think people can write faster than they can type and B) if you feel that the burden is on the student to learn or on the teacher to teach.
Now, if the burden is on the student to learn, why do you care about the method the student decides to use? If the burden is on the teacher, I can understand having a preference.

A serious amount of weight goes into a car for protection. Take that away and you're riding around in a light weight coffin just looking for a hole. If EVERYONE used these it would be barely doable. Semi-trailers would rule the road, but they basically do now anyway. Still, people would die in droves. Not that we can't stand to do with a few less people, but I'd prefer to see darwinian selection based on something more substantial than an attraction to fast sports cars.
I carry keys around like everyone does, but it's not my freaking door key that causes the problems, it's the freaking keys for my cars. My "regular" car is a Liberty, so I carry a big fatty key for that plus a remote. My Ram pickup has this HUGE key with a remote built in, and my RAV4 has another fatty key that completes the mess I carry around every day. Screw the door key, it's this little dinky thing that takes up almost no room.
Invent something that takes care of that mess for me and I'll buy it. 'Till then, this invention is useless for me. It's DEAD to me, I tell you!

Fixing the bugs you speak of are the job of the developers, they aren't "lost opportunities". The time isn't lost forever, it's built into the product cycle.
The software cost doesn't grow, it's the same as always - the cost is to support your product so that it keeps the market share that generates the revenue, and to do that, you can't sit on your laurels.
The support can go back to the 2 year software update cycle, but at the end of the 2 years, you won't have customers.
