We do incremental daily backups of main data to LTO4, they go offsite the next day, and a full backup every week, per set. We have 3 sets - there is always one off-site. We also locally sync startup disks, Exchange data goes over the wire every night, finance database is backed up every night via FTP over the wire.
I think we worked it out that we would only lose a weeks worth of data if the office burned down AND the van carrying one set of backup tapes crashed and exploded.
Such a fragmented system introduces security through obscurity, but by collating it we ensure everyone involved has the entire picture, rather than just what they need to know about the child.
And then Steve Jobs comes to your house in the middle of the night, and drags you kicking and screaming to the store and forces you to buy it with a gun to your head...

Unfortunately, your argument falls down when repeated surveys suggest the general populace is less and less trusting of the government and more and more cynical of the expansion of the database/surveillance state.
