Ignore the HPNA stuff which will require special NICs, that's only useful if you want to run network AND phone on the lines concurrently.
4 wires is enough for 10Mbit/s ethernet - any pair of 10/100 cards should be able to make a connection. It won't be super-fantastic, but will work with what you've got. What you have running through the walls is basically Cat3.
Even better, use GNU ddrescue (basically, an intelligent wrapper for dd).
It will reads larger blocks when it can, smaller ones when it's finding errors, writes a log file and allows resuming.
I'll go you one better - make a copy, then make a copy of the copy, then recover the 2nd generation copy. That way, you avoid a second pass through the failing drive.

When the price of oil gets high enough, then projects like Oil Sands start to get profitable. The Athabasca Oil Sands produce 5% of Canada's greenhouse gas emissions and the tailing ponds occupy something like 130km^2.
