While I think what you say is very true, there is another element to it.
Its not necessarily that technical people can't put things into a simple to understand format with pretty color graphs and all the right buzzwords - Its often that they just don't have the time. Thats not to say the proper documentation isn't vital or important, just that some people would rather spend their time actually making something work, and others are more interested in making something understood.
That said, if you have the skills to do both you will suceed at pretty much whatever you try.

Most companies will agree to reasonable changes to your contract if you negotiate with them upon signing. Contracts can include ridiculous limitations to the way you live your life now and in the future, read them carefully and don't be afraid to ask for changes. they've had the contract written up to give them as much as possible, but as an employee its up to you to decide how much you want to give them.
