Stick together and tell them to shove it. In my experience most of these tactics are bluff and usually not worth the paper they are written on - if you enter into an agreement under duress the agreement can be nullified. This is basically a threat - it may be common practise and give some business types a hard-on , but you don't have to cop it.

Why choose OSX server ? Why does your server need all the gui goodies , digital hub blah blah that makes OSX so nice to use ?
This is an area where linux/BSD excels , can be configured for the job at hand ( read stable ) and can run on suitable-no-bullshit-run-what-ya-brung hardware. What a waste of nice hardware and software to confine it as a server when there are much more suitable tools to do the job - and do it cheaper and better.
Do they have electricity in Auckland yet ? I was looking eastward a couple of years back and the lights went out all of a sudden. They haven't come back on yet...so either the power is still off or the last person out really did turn off the lights.
Now it makes sense why internet.com pulled their finger out and consolidated their very neglected holdings. They weren't just being nice at all. linuxnewbie has been screaming out for a face lift for over a year now. Competition did the trick.

It's really the opposite. Kangaroo & Dingo populations have exploded to pest proportions - they have adapted well. OTOH , Koala , Platypus , many small marsupials and amphibians have not coped well with agriculture and urban sprawl.

No-one would specify an OS / Platform or any other detail that is not necessary. A good specification in an RFQ ( Request for Quote) or an RFT (tender) outlines essential & desirable criteria. By specifying outcomes rather than details the market is opened up and the benefits of an open proceurement policy are seen - including $$$ savings , quality and probity.
The problems faced when writing specs are legacy systems & applications - staff knowledge & training included. It may be necessary to specify exact hardware / software ; you may be able to specify "compatibility" requirements rather than exact products ; or in the best case you can write an outcomes only based spec.
It's horses for courses though. The more open the better generally - if you start closing your specs you start removing some of the benefits - $$$$ , probity for example. But , if you have to run the app on an NT4 box with IIS then spec it that way.
If you need compatability with Office apps then spec it that way.
If you need Office then just order a copy. Once you water down your spec by being too tight you may as well just buy the product you want. There is no point issuing an RFQ if there is no market to test. And sometimes this is the best option to take.
