Put a tech demo or game demo togother, put it on a website, and put the URL on your resume. If you don't have a demo, you probably aren't fit for the industry since most successful people there enjoy writing games/demos. Just because you like playing games doesn't mean you like making games. Also, keep in mind they nobody is going to hire you to make YOUR game, they are hiring you to make THEIR game, so your creative ideas are meaningless to potential employers.
'AI' refers to an obsolete field of CS which is rapidly being replaced by NN, pattern classification and statistical learning theory. 'Game AI' refers to heuristics that programmers hack together at 3am before shipping a title.

You do realize that you are completely wrong, right. There are many approaches to blind deconvolution. Many of these techniques are quite old. Although it is a difficult problem, it is not cutting-edge stuff.
Please not that it takes more than graphics to make a game. After you learn graphics and OpenGL, you will need to learn some datastructures to organize all of your data, AI, Physics simulation, collision detection, audio, UI. Then you will also need art work. So even if you have a great idea and know open gl you are only 5% of the way (at most) toward making a game.
Greed may be one motivation, but laziness is the other. Of the kids who I have seen drop out of CS, most go into something "easier": liberal arts, advertising, MBA. I haven't seen any opt for a professional program which entail smuch more work and takes longer to earn a degree.
Also, let's not confuse code monkey jobs which are getting outsourced to CS. You can outsource an implementation, but not the design.
