You can use pkgsrc from NetBSD on a linux kernel.
If you are refering to GNOME, it has a perfectly usabe menu editor.

It's Ubuntu 5.10. Installed via PXE since it doens't have a CD drive.
I got the X41 laptop and I must say I'm very pleased with it.
