I've used the method of backing up the OEM data and reinstalling since WinXP. It has gotten a bit more complicated over the years after Vista and Windows 7 were released but is still the best method.

I've had a lot of problems with EC2 that upgrading to at least 3.3 would fix. I just hope Amazon would start thinking about upgrading EC2 or migrate it from Xen as they seem to have gotten stuck with 3.1 and I've seen nothing that indicates there's going to be an upgrade.
