You can't. If you don't want to be tracked, get a paper map (they do still exist!) and call a taxi (they still exist, too!).
You write that post as if it's impossible to live without Uber and Apple Maps. You know that people lived just fine without those things just a few years ago, and lots of people (myself included) live full, complete lives without phone maps and Uber now, right?

    Looking at Sweden

Sweden has banking and finance regulations. The US, largely doesn't. In the US, it costs 3-4% to take credit cards, and that number isn't going down unless there's some real legislation passed. That'll happen just as soon as donkeys fly.

, but from what I heard it's usually about 3-5% (direct costs only)

That's a wildly incorrect number. It costs $30-$50 to count up $1000 in cash and deposit it in a bank? That doesn't even pass the smell test. If it costs a business that much money to deal with cash, they're simply incompetent.

  15. Lung cancer v 9/11 on US Government Will Be Scanning Your Face At 20 Top Airports, Documents Show (buzzfeednews.com) · · Score: 3, Insightful

You might as well compare 180,000 annual lung cancer deaths to 9/11.

Not likely. 9/11 was a one-off suicide attack by irrational religious fundamentalists. It probably wasn't even all that preventable.

Out of 180,000 lung cancer deaths a year an estimated 85% are caused by tobacco use. Considering that a simple law outlawing the sale of tobacco could save upwards of 153,000 people a year (that's 51 9/11's a year) from an early death, I would say that lung cancer deaths are much more tragic than 9/11.
