Since these universities, companies, stand alone hobbiests, etc live under the protection and order granted by a majority of fair citizens then these entities need to be required to be fair to the rest of the citizens. Its informative to see the full CO2 footprint of foods, because some foods have a very large environmental cost and its not always apparent which ones are the worst offenders. For example, if you bike to work because you care about your CO2 footprint, from this study it looks like you could almost lower it by riding in a car instead if those extra calories come from high impact foods. Or, perhaps lower it quite a bit by giving up some stuff you don't even care about that much but the impact to the environment is large.
