We have client contracts worth many $$$, a simple $15 a seat license stops our users forwarding on some infested file. Money well spent imo, it costs near nothing to have and we don't have to deal with our clients going nuts at us - and potentially losing a contract.
We actually have a pretty good setup running, every comp authenticates against Open Directory - and noone outside of IT has admin access - so no sudo etc. Noone can write to the filesystem outside of their home and that is Filevaulted. All of the desktops have been built from a image that was prehardened along the lines of the Apple guidelines, and a lot of stuff is enforced at login time by a script.
All of the Macs I admin have a copy of Virex on them, and it's pretty good about catching the infected emails and documents that occasionally find their way onto our network. Whilst the Viruses have no impact on our Macs, we'd rather not be sending them off to our partners and customers - it just looks unprofessional.
We update our virus dat files get updated weekly - they are the same ones as used in VirusScan on Windows.
I hope they get some group calendaring stuff going soon, it's a real thorn in our side at the moment - and iCal in its current state certainly isn't the solution.
I have Apache 2, PHP5, PostgreSQL and mod_ssl all running happily on my desktop, wasn't really any harder than getting it running on *nix except for the ssl part.
I am a Linux/Unix admin professionaly and I recently went from OpenOffice back to MS-Office.
The cost of "free" software is too damn high when you cant share documents properly. My CV kept causing everyone elses Word to crash, thats a cost I couldn't afford to pay as a jobseeker.

The updating issue really doesnt figure into it. On Windows I configure windowsupdate to update, on gentoo there is emerge sync && emerge -uD world running on cron.
As one of those people that have adminned Linux and Windows (and FreeBSD and Solaris) professionally, I don't see many great differences. My end users working in marketing or whatever prefer Windows/Office. They do think differently than us geeks, and aren't willing to spend hours dealing with archaic command lines. Windows performs admirably there.
Now if I could get my users using MacosX then everyone would be happier.

A lot of those services are actually in OSX Tiger Server. They are hidden, and undocumented but there.

The "underlayment" is not FreeBSD. Some bits and pieces were taken from BSD and built on top of the Mach kernel.
