Because: - it is bad policy to use the same password in multiple sites. - when you have dozens of passwords, pass-phrases does not make it easier to remember. it is also difficult to come up with multiple pass-phrases. - it is easier to randomly generate password and use password manager.
I believe you can goto Account Settings immediately after you signed up the account, and opt-out of things you don't use like web history, google+... (Just out of my memory. I haven't check if there's any changes.)

If you don't want to carry multiple phones, maybe you should check out phones that take dual SIM cards.

However, I don't really understand why we need it. The problems I see are locked phones and ridiculous cost of SIM card (about $30 or more). Not SIM card being to big.

You can revert it to the old style by enabling the "Menu Bar" (in the Preference menu item)
