Why do you want to get rid of Exchange for GMail? What has it not been doing for you? I'm at a small company, and we have Macs, Windows and Fedora desktops. The only changes we've made was removing Office for Mac and replacing it with Mail.app on the Macs and using OpenOffice on the Macs and Linux desktops.
All tied together with the an Active Directory on Server 2003 and an Exchange server.

If you ran Mac Desktops, OpenDirectory was a very handy way to manage them, OS X Server also has the tools to deploy images. Yes, you can run OS X Server on MacPros and now Mini's but neither really fit in if you already have a server room set up.
Limited options? You got the whole thing, OS X Server with unlimited licenses for $1000, cheaper then Enterprise Linux or Windows.
Limited Server tools? Have you ever actually used OS X Server? It has it's tools for every server daemon that ships with it.
It's only no big loss because Apple didn't want to create an Enterprise division, but if you ran OS X desktops then OS X Server was a pretty good investment.
Apple will learn when people stop buying the iPhone, iPod and iPad. So far, there is not much for Apple to learn; the lock in on those devices just doesn't seem to bother most people, possibly because they don't expect their phone to act like their general purpose desktop.
I hope their security suite is better then their backup tool. Did a test restore with their trial and it was unusable, permissions were all messed up and it was missing a lot of files.
I personally won't recommend any of their products.

There is a good chance Oracle owns the OpenOffice.org name. If they break with Oracle (a good idea) they're going to have to leave it behind.
