Sure, some things can be represented as an icon but what would be a suitable, unambiguous image for "formatting" or "replace" or "page setup" for example.
The written word is an incredibly complex and yet concise combination of 26 unambiguous images which can carry a much more precise meaning that an icon.
A picture may be worth 1001 words but at least you'd understand what those words mean on the first read.
You intersperse it with your own content, including speach, music and sound effects combining your own ideas with the original product....kind of like how you do when forking an open source project.

I'm a musician and a touch screen would be perfect for me. Unless you want to be staring at the computer a mouse is very limiting. The time it takes to figure out where you left the cursor and reposition it over the thing you want to click on can be crucial, especially if you're performing live. Plus you get the touchy-feely-ness which is severly lacking in a keyboard & mouse setup.
Yeah, it might get a bit greasy but then so will I.
(I removed those buttons completely and can just hold the Windows key and middle-click anywhere on a window do close it. [The left and right buttons are for movement and resizing, with the same method.])
