You can have multiplayer angband.
Pause isn't the same as turn-based at all. In a real roguelike, you get infinite time to consider your next move. And then you press a key and get exactly the move you wanted. This is the main reason why you can't have a multiplayer roguelike.
MAngband is a multiplayer version of Angband. If I remember correctly, it uses a tick system to handle actions. It's not quite real-time, so you have time to think, but not much. Everyone playing performs their actions and they all happen at the next tick.
The time between actions is configurable, so if you're hosting your own for friends you can make the game faster or slower, whichever is more comfortable to you. If you're accustomed to taking a long time between actions you'll have to readjust, but it works well enough and is fun without ruining the roguelike feel.

You are not alone.
As the original gamer generation(s) age, they have an ever expanding sense of what a videogame can acceptably look like. While a gamer of a more recent generation may (tho not always, of course, god bless them) find it difficult to make the visual transition to ye olde games, older gamers in particular often find they are as happy with decades-old depictions of a gameplay evironment as some more cutting edge.
With that in mind, may I recommend a brief smattering of games from genres or eras that we often forget:

I think the project you are lookingfor is mAngband (multiplayer Angband). It is an expanded and refined rougelike game that has been extensively rewritten for mutiplayer play. Specifically Angband is based or Moria and uMoria which was based off Rouge. I believe Nethack forked off from Moria as well so it could go a different direction. telenet nethack.alt.org to watch live games
It can be a lot of fun to just sit and watch someone play nethack. Just type telnet nethack.alt.org into any old command line, and you can connect up to play, but also to observer a game in progress. Try to match up your window size to the player you wish to observer (listed in the game info). It's great fun to watch people are often far, far better than you, getting far, far further in the game than you ever will
:P And my god, the speed these guys progress at. Yikes!
This thread will (has) descend into alternative recommendations, so I'll take a moment to pimp a multiplayer variant of Angband, being MAngband ( http://www.mangband.org/ ). A realtime non-turnbased roguelike sounds kooky, but it actually works out pretty darned well (and Morgoth in realtime is a very frightening experience).
On a side note, I always appreciate roguelike-related threads on slashdot, as it is a rare opporunity for my username to have any sense of context. -

For some, the golden age remains.
Fun article that definitely made me a bit misty-eyed for ye olde days. However, its unfortunate that the article paints roguelikes as being firmly past-tense. In terms of pure dungeon crawl hack-n-slash, roguelikes have persisted, grown in interesting directions, and remain vibrant today.

MAngband perma-death
Well, I run a MAngband server, and we have a sort of perma-death there. If your player croaks, then he turns into a ghost... which can be revived, or die horribly. It seems like a good balance. The players don't mind too much. It works because hey, they had a chance to avoid perma-death. Most of the time.

Other varientsThere are other networked varients out there which are neat. Like Mangband ( Mulitplayer Angband, a spin off of moria, which is a spin off of hack), and TomeNet (there is another site but it's slow right now.)
I run a server for both games on wckg.net. The main server for tomenet is europe.tomenet.net. They are both fun. `8r)

Multiplayer Online Nethack variant
I recently stumbled across a Multiplayer network/internet Nethack variant called Mangband - details see www.mangband.org- play Nethack with/against other people (Playerkilling is possible by default)
Very few players online at the moment, but running your own server on Linux is very simple, and the UI is all text based.
It ain't Everquest, but fun nonetheless - no longer alone in the dungeon. -

You could try MAngband if you want to play an online dungeon hack and slash game that tests your reflexes. Fight the forces of Morgoth in realtime... in ASCII form! Available in source code and binary form for just about all platforms.
Well, seriously, Angband (a roguelike) is fun as heck when you're playing it in realtime, and that giant grey P is blazing across your screen. There's a certain element of "Quick! Get me my red coat... and my brown pants!" to running away from large packs of hounds/demons/summoners on sight, too. -
Become a developer
Well, here's a novel idea.
Instead of spending ages in a fruitless search for the elusive Awesome Game for the Macintosh, you could learn how to program, and make or port your own games.
Or you could play MAngband and enjoy some fine multiplayer roguelike action. I know it's been ported to OSX. You just have to look for it on the forums there. -

Mangband
mangband! It's kind of like a realtime, multiplayer nethack. Not quite as advanced as nethack in terms of creatures and items, but a huge amount of fun nonetheless. And I promise your graphics cards will handle it.
For something a little more flashy there's Crossfire, which takes the graphics all the way from Nethack levels to Gauntlet levels. I've had some problems at LAN parties with the Windows client, but if you're all Linux you should be OK.
These games prove that fancy graphics aren't necessary to make a game fun. Plus, call me a wuss if you want, but I like that they can be played cooperatively.

What I'm looking for is something almost like a MUD, but movement, mapping, combat and other annoying details handled in a roguelike way.
Oh. Well, that's actually pretty straightforward. There are a number of mud clients that handle automapping and allow you to use roguelike navigation controls. Combat's a bit tougher, but triggers can automate it, and binding a movement key to "flee" sort of works. Check out KMUD, and here's a screenshot of the mapping interface.
Or, if you want something like the original rogue, what about MAngband? -

I'm still waiting for net-playable Nethack.
Until then, I suppose MAngband will have to do. It's good and all, but I never got into Angband like I did Nethack. -

Of course, even rogue-like games have become real-time. Now there's Mangband - multiplayer real-time angband. It's not very popular (in that I never saw more than a handful of people playing when I looked), but kind of neat anyway.

Multiplayer is the biggest problem
I'm a semi-game developer. I haven't really written anything, I'm just an amateur programmer teaching myself OpenGL so I can. The biggest problem I see with open sources games, is hacked up multiplayer client programs. One game I know of, Mangband, avoids this by keeping all information on the server. But they can afford this, beacuse it's a multiplayer roguelike, and doesn't take a lot of processing power. Imaging what would happen if Quake 3 Arena, to avoid hacked clients, did all the 3d rendering on the server side.
